Here’s a great idea for a delicious 5 star snack or appetizer, simple to make and yet your friends and family will think you’re a gourmet chef!
To start, use my Dad's Focaccia bread recipe. (He would make this during the fair sometimes and make some great Italian sandwiches! But, I digress; we’ll get into that a little later …)
¼ to ½ cup olive oil
1 package of Salvatore’s Pizza Dough mix
1 package of Salvatore’s Italian Seasoning
Your favorite Romano or Parmesan Grated Cheese
Fresh Basil
Fresh Baby Spinach
Fresh Mozzarella Cheese
Grape or Cherry Tomatoes
Balsamic Vinegar
Make your dough as per directions on the package. Spread out the dough on a greased ½ sheet pan or cookie sheet. Poke with end of spoon about every inch or so (to give it that old world authentic look). It also allows perforations of the dough for the flavors and seasonings to seep into the dough.

Cover and let it rise about 10 min. Drizzle the top with olive oil and spread evenly. Sprinkle with Italian seasonings and Romano grated cheese.
In a separate bowl toss the fresh spinach (I use a bag of washed baby spinach from the grocery store) with olive oil, grated cheese, salt pepper and garlic and top the focaccia bread.
Add sliced cherry tomatoes, fresh Mozzarella and basil, bake in a 450 degree preheated oven for 14 to 18 min. Add fresh chopped Basil, drizzle with balsamic vinegar and serve warm.
